Banana Chocolate Chip Vegan Muffins

These muffins are hearty and healthy and my children love them. They love the flavor of bananas with chocolate chips and they don't mind at all that they are a heartier muffin made with whole wheat and oats. You might want to make a double batch because they are so yummy that they don't last long!
 

Prep time: 15 min
Cook time: 25 hour
Total time: 40 min
Yield: 12 large muffins

Ingredients:
Dry
1 1/2 cup whole wheat flour
1 cup quick cooking oat flakes
2 tsp baking powder
2 tsp baking powder
1/2 tsp salt
1/2 cup sugar, unrefined
1 Tsp ground flax seed
1/2 cup vegan chocolate chips
Wet
1/3 cup vegetable oil, canola or grape seed
3/4 cup soy or almond milk
1 tsp vanilla
1 cup ripe bananas, mashed



Directions:
1. Preheat oven to 350 degrees.

2. In a medium mixing bowl, combine all the dry ingredients except the chocolate chips.

3.In another mixing bowl add the wet ingredients and mix well by hand or with an electric mixer. Add the dry ingredients to the wet and mix well. Fold the chocolate chips into the batter and mix lightly.

4. Grease muffin tins or insert paper liners into the muffin cups.

5. Spoon the batter into the cups and fill 3/4 full.

6. Bake for 20 minutes. Let them cool for 10 minutes and enjoy these delicious vegan banana chocolate chip muffins!
