BEAN SALAD VINAIGRETTE

Bean salad vinaigrette is a great colorful and tasty addition to dress up any meal
 

Prep time: 20 min
Total time: 1 hour 20 min
Yield: 4-6 servings

Ingredients:
1 1/2 cups garbanzo beans
1 1/2 cups kidney beans
1 cup corn (optional)
1 medium onion
1 clove garlic
1/2 tsp salt
2 Tbsp vegetable oil
2 Tbsp balsamic vinegar
3 sprigs of parsley


Directions:
Mince onion and parsley, chop or press garlic. Mix all ingredients in a large bowl.
