Beautiful Vegan Banana Nut Bread

This vegan banana bread is more delicious than words can describe. My daughter expressed it well when she said "this is the perfect banana bread!" It is moist and has a wonderful buttery flavor. The sweet nutty topping makes it a 10 out of 10!
 

Prep time: 15 min
Cook time: 55 min
Total time: 1 hour 10 min
Yield: 12 slices

Ingredients:
Dry
1 1/4 cups whole wheat flour
3/4 cup unbleached white flour
1/2 cup unrefined sugar
4 tsp non alum baking powder
1 Tbs ground flax seed
1/4 tsp salt

Wet
2 cups mashed bananas
1 cup soy or almond milk
1/4 cup grape seed or canola oil
2 tsp vanilla

Topping:
1/8 cup walnuts, chopped
1/4 cup brown sugar
1/2 tsp nutmeg


Directions:
1. Preheat oven to 350 F (180 C).

2. Mix the dry ingredients together in a mixing bowl.

3. In another mixing bowl combine the wet ingredients and mix with an electric mixer until creamy.

4. Add the dry ingredients to the wet and stir until well mixed.

5. Transfer the batter into a large, lightly oiled and floured loaf pan.

6. Mix the topping ingredients and sprinkle on top of the loaf.

7. Bake for 55 minutes until golden on top and a toothpick comes out clean.

8. Wait at least 15 minutes before removing from the pan. Slice and enjoy this delicious vegan banana nut bread!
