CARROT CAKE

This cake is very easy to make and the simple addition of grated apples make this carrot cake incredibly moist and fluffy!

Carrot Cake

Ingredients:
1 cup unrefined organic sugar
1 cup organic canola oil
4 organic eggs
1 cup organic unbleached flour
1 cup organic whole wheat flour
1 1/2 tsp. baking soda

1 tsp salt
2 tsp. cinnamon
2 cup grated organic carrot
1 1/2 cup grated organic apple
1 cup organic raisins
1/2 cup chopped organic walnuts (optional)

Preparation:
1. Preheat oven to 350° F.

2. In a medium mixing bowl, Blend together the sugar, oil, and eggs. Beat until creamy.

3.
In a large mixing bowl mix the flours, baking soda, salt and cinnamon. Add the wet mixture to the bowl and add the carrots, apples, raisins and walnuts.

4. Pour the batter into a greased 9 x 13 cake pan. Bake for 35 minutes, and ice when the cake has cooled.

Cream Cheese Icing:
1 package (4oz.) cream cheese, softened
1/4 cup butter
1 cup icing sugar
1/2 tsp. vanilla

Combine the cream cheese, vanilla and butter in a bowl. Beat on medium speed and add the icing sugar and beat until smooth.
