Tofu Stir Fry Peanut Butter Cookies Veggie Burger Waffles with Fruit Syrup Peach Smoothy Paella Spanish Rice

CARROT SPICE MUFFINS
These carrot muffins are very light, low fat, healthy and incredibly delicious!
Makes 12 large muffins

 


Ingredients:
4 cups all whole wheat flour
1 1/4 cup unrefined sugar
1 Tbs. baking powder

1/2 tsp. baking soda
1 tsp. salt
1 tsp. allspice
2 tsp. cinnamon
1 tsp. vanilla extract
4 eggs
1/4 cup lemon juice
1 1/2 cup margarine or vegetable oil
2 1/2 cups grated carrots
optional additions:
3/4 cup raisins
3/4 cup walnuts

Preparation:
1.
Preheat oven to 350°.

2. In a large mixing bowl combine the flour, baking powder, baking soda, cinnamon, allspice and salt.

3. In another mixing bowl combine the oil or margarine, vanilla, sugar, lemon juice and eggs, beat until creamy and add to the other bowl. Stir just until moistened, the batter should be lumpy. Fold in the grated carrot and or the raisins or walnuts.

4. Lightly grease muffin cups or line with muffin liners, fill 2/3 full. Bake for 20 minutes or until golden. Remove from pan and serve warm.
