GREEN CHICKPEA SALAD
This salad is so easy to make and surprisingly quite filling.
A combination of bean salad with greens and a low fat salad dressing.
Serves 2 alone , or serves 4 as an accompaniment to a main dish

Ingredients:
8 oz arugula or any other salad greens
1 cup chickpeas
, drained
1 tsp olive oil
1/2 cup walnut pieces, chopped
1 medium red onion (diced)

Dressing:
1/4 cup olive oil
1 Tbsp balsamic vinegar
2 Tbsp lemon juice
1 tsp sugar
1 tsp salt

Preparation:
In a small measuring cup 1/4 cup olive oil, add the remaining dressing ingredients and mix well with a fork. Set aside.
In a mixing bowl combine chickpeas, walnuts, onions and olive oil.
In salad bowl add the salad greens. Take a moment to stir the dressing again, pour half of the dressing on the salad greens. Toss lightly.
Pour the other half of the dressing on the chickpeas mix, toss and mix well. Add the chickpea salad to the salad greens and toss gently.
Serve alone for a light meal or with a main dish. Enjoy!
