Chocolate Swirl Cheesecake

Crust Recipe

Chocolate cheescake

1 1/2c organic graham crackers
1/4c unrefined organic sugar
1/4c organic butter or margarine

Melt butter in a small saucepan over low heat, mix sugar. In a small bowl crush the graham crackers into crumbs with a fork. Add butter and sugar mixture to the bowl and combine Put in an 8x8 inch pan and press down evenly with a fork.

 

 

Cheese Cake Filling

Ingredients:
24 oz organic cream cheese (softened)
2 Tbs organic butter or margarine (softened)
1/2 cup un refined organic sugar
1/2 tsp organic vanilla extract
3 organic eggs

Preparation:
Preheat oven at 350 degrees F.
In a medium bowl blend cheese, sugar, and vanilla till fluffy. Add three eggs, blend on low till combined. Pour over crust.
In a small saucepan or a double boiler melt 1/2 cup chocolate chips and 1 Tbs. butter. When it turns to liquid pour over cheese cake in horizontal lines from one side of the pan to the other. To create the swirlled effect, take a knife and lightly run the knife through the lines in a vertical motion from one end of the pan to the other. Do not over do it or you will over mix the chocolate.
Bake for 50 minutes.
