Gluten Free Chocolate Mint Brownies

These chocolate mint brownies are so delicious and they do not taste gluten free at all. They are a dream come true for mint chocolate lovers!

Cook time: 25 min
Total time: 45 min
Yield: 9 large brownies

Ingredients:
1 cup unrefined sugar
1/2 cup unsaturated vegetable margarine
, softened
3 eggs
1 1/2 tsp pure mint extract
1/2 tsp salt
1/3 cup tapioca flour
1/3 cup white rice flour
1/2 cup dark cocoa powder, sifted
1 1/2 Tbs icing sugar


Directions:
1. Preheat oven to 350 F (180 C).

2. In a large mixing bowl combine the tapioca flour , white rice flour, sifted cocoa powder and salt.

3. In another mixing bowl combine the sugar, softened margarine, mint extract and eggs. Blend well with an electric mixer until creamy.

4. Add the dry ingredients to the wet and mix well by hand.

5. Grease an 8" x 8" pan and spoon the batter into the pan and spread evenly with a spatula.

6. Bake for 25 minutes, and remove from the oven while still soft for a deliciously moist brownie.

7.When the brownies have cooled, lightly sift the powdered icing sugar over the brownies. Slice, serve and enjoy these minty chocolate treats!
