Greek Pita Pizza
These greek vegetarian pita pizzas are so quick to make without the fuss of making pizza dough. The crust of the pitta is light and crunchy and they fit right in the palm of the hand. They are so delicious and our children love them!
Prep time 20 minutes
Serves 4
Ingredients:
4 whole wheat pita
1/2 cup organic tomato sauce
1/2 cup organic mozzarella cheese, Shredded
1/2 cup organic feta cheese, crumbled
1 medium onion
1 red bell pepper, thin slices
1 tomato, sliced wedges
1 garlic clove, minced
3 Tbs. kalamata olives, sliced
3 Tbs. Marinated Artichoke Hearts, chopped
2 Tbs. olive oil
1/4 tsp. oregano
1/4 tsp. basil
Preparation:
1. Preheat oven to 300 ° F, or use a toaster oven.
2. Mince the onion and saute with olive oil on low heat. Slice the pepper and add to onions, saute for 5 minutes.
3. Place the 4 pitas on a baking tray. Lightly baste the top of each pita with olive oil.
4. In a small bowl combine the tomato sauce, garlic, oregano and basil. Spread the tomato sauce on the top of each pita.
5. Sprinkle the mozzerella cheese all over the tomato sauce. Add the olives, artichoke hearts, onions, tomato slices and peppers. Sprinkle the crumbled feta over the top.
6.. Cook in the oven for 10 minutes, the cheese should be melted before removing from the oven.
Serve warm and enjoy!
