Kriya's Berry Bliss Raw Food Cake
Our friend made this cake for a birthday. It was a delicious success. Even the non vegetarian, non raw foodists returned for seconds and even thirds!This recipe involves a little advance preparation by soaking the almonds and pistachios overnight. It is worth every bit of effort, the flavour of the pistachio and almonds with the coconut butter and berries is divine. Very creamy and rich!

Ingredients:
1 cup raw almonds
1/2 cup raw pistachios
1 cup raw coconut butter
1/2 cup unpasturized honey, solidified is best
1 tsp. vanilla
2 cups bluberries or huckleberries
1/2 cup raw cacao powder
1/4 cup almond milk
1 banana

Preparation:
1.
Soak almonds and pistachios overnight in water.

2. Drain the water the next day and discard. Blend the almonds and pistachios in a vita-mixer or food processor with the almond milk and vanilla.

3. In a double boiler warm up the coconut butter and honey until soft. Do not overheat until it becomes a liquid.

4. Measure 3/4 cup of the coconut, honey mixture and add to the almonds, pistachios, almond, milk and vanilla. Blend it in the vita mixer or food processor until creamy.

5. Transfer the contents into a 8"x8" pan. Place in fridge to cool. As it cools, the coconut butter and honey solidify again to give the cake form.

Top Layer:
1. In the vita-mixer blend the cacao powder, blueberries and the remaining coconut butter and honey mixture. Blend until smooth.

2. Pour over the bottom layer and place the pan back in the fridge. Cool for 1 hour in the fridge until solid.

3. Add the banana to the blender and blend until smooth. Drizzle over the cake. Slice and serve.
