1 cup of vegetable margarine (Earth balance is our favorite)
1 cup of unrefined cane sugar
1 tsp vanilla
1tsp baking soda
1/3 cup hot water
1 1/2 cup whole wheat flour
1/2 tsp sea salt
2 cups large oat flakes
1 cup chocolate chips
1/2 cup walnuts or sunflower seeds (optional)
Preheat oven to
350° F.
In a large mixing bowl, cream together the margarine, sugar
and vanilla until light. Dissolve baking soda in boiling water and add
to the batter and mix well.
In a separate bowl combine the flour, oats, and salt. Add the dry ingredients to the wet ingredients and mix until well
combined. Fold in the chocolate chips and nuts or seeds. Lightly oil a cookie sheet and place small balls of batter a couple inches appart. Press lightly with a fork into a
cookie shape. Bake for 10-12 minutes and remove while still soft to the touch.
Enjoy a scrumptious crunchy, nutty chocolate chip cookie!
