PASTA WITH A GARLIC CREAM SAUCE
Very simple and yet so delicious

Serves 4-6
prep time: 20 minutes

Bookmark and Share vegetarian pasta with creamy garlic sauce

Ingredients:
4-6 servings of pasta (of your choice)
1/2 lb. of firm tofu (cubed)
2 T tamari or soy sauce
2T olive oil
1 clove garlic (pressed)
1/2 cup mayonnaise
1 T stone ground mustard
1/2 t salt
1/2 cup chives minced
2 cup veggies (broccoli, carrot, cauliflower)

1. In a measuring cup, mix garlic, salt, oil, mayonaise and mustard. Add chives. Set aside.
2. Cook pasta according to the directions on the package. Set the timer because you are going to put the veggies into boiling water to blanch them, just before finished cooking, about 1 minute.
3. While pasta is cooking dice the tofu into small cubes and marinate in a shallow dish with tamari. Cut the broccoli, cauliflower and carrot into small pieces, keep an eye on the timer, it should be almost time to add the greens. Cook the greens with the pasta for 1 minute and Drain water.
4. In a large bowl add the pasta and vegetables. Pour the creamy garlic sauce over the pasta and toss lightly.
5. In a skillet lightly sautee over medium heat, tofu with olive oil until golden. stir frequently to ensure that all sides are browned.
Add tofu to veggies and toss again.

Serve warm and enjoy!
