Ingredients:
1 1/4cup whole wheat flour
3/4 cup wheat bran
1/4 cup unrefined sugar
2 tsp. baking powder
1 egg
1 cup milk ( soy, almond or rice is fine)
1/4 cup canola oil
1/4 cup blackstrap molasses
1/2 tsp. salt
1 cup raisins *can substitute with dried cranberries or currants
Preparation:
Preheat oven to 400°. In a large mixing bowl combine the flour, bran,
baking powder and salt. In another mixing bowl combine the milk, salt,
oil, molasses and egg, beat until creamy and add to the other bowl. Stir just
until moistened, the batter should be lumpy. Fold in the raisins.
Lightly grease muffin cups or line with muffin liners, fill 2/3 full.
Bake for 20 minutes or until golden. Remove from pan and serve warm.
