Serves 2

This is an easy yummy sandwich that goes great with any kind of soup

 

CLT Sandwich

Ingredients:
4 pieces of bread toasted
1 onion sliced
1 tomato sliced
100g cheddar cheese sliced
1/4 cucumber sliced
lettuce
mayonnaise to taste
salt and pepper

Layer on cheese, tomato, cucumber and onion slices. Spread mayo on the second slice, and garnish with a pickle, olive or both.

GREEK SALAD IN A PITA
Serves 6

Ingredients:
1 15.5 oz can white beans
1 1/2 cups cucumbers, chopped
1 cup tomatoes, diced
1/2 cup feta cheese, crumbled
1/3 cup red onion, chopped
1/4 cup kalamata or black olives, chopped
1 portabella mushroom, diced
2 Tbsp red wine vinegar
1 1/2 tsp dried oregano
1/4 tsp pepper
6 whole wheat pitas

Combine all ingredients in a medium bowl and mix well. Cover and refrigerate for at least 4 hours to blend flavors. Slice the pitas in hlf and spoon the ingredients inside. Enjoy this complete protein meal.

TOFU SCRAMBLER
A delicious sandwich filling for vegans and vegetarians alike
Serves 4

Ingredients:
16 oz package of tofu, firm or extra firm
2 Tbsp vegetable oil
1/2 medium onion, chopped fine
1 clove garlic, peeled and minced
2 tsp tamari
1/2 tsp tumeric
1/2 tsp cumin
1/4 tsp salt
4 whole wheat kaiser buns

Drain tofu and remove excess water by placing it in a colander and putting presure on it, set aside. Heat the oil in a skillet on medium and saute the onions for a couple of minutes and then add the garlic for another minute. Crumble the tofu into the skillet and add the salt, cumin and tumeric. Saute for 4 minutes, stirring occasionally. Add the tamari and stir well. Remove from the heat and let it cool. Spread your favorite mayonaise (see our tofu mayonnaise or roasted garlic mayo in our spread section) on a sliced whole wheat kaiser. Spoon the scrambler filling onto the kaiser bun and top with alfalfa sprouts.
