SPANAKOPITA

A delicious appetizer that can be prepared ahead of time and
cooked at the last minute as it only takes 10 minutes to bake them.
Ingredients:
2 packages of frozen spinach (thawed and drained) or 1 large bunch fresh
1 large onion
2 cups feta cheese (crumbled)
1 package phyllo pastry
1/4 cup olive oil
1/2 cup margarine
1 Tbsp oregano
2 cloves of garlic (minced)
1/4 cup lemon juice
1/4 tsp pepper
Preparation:
1. Steam the spinach for about 4 minutes, until just wilted. Chop well, then place in a bowl and set aside.
2. Warm oil in a pan and lightly
saute onions and garlic.
3. Add the feta cheese, lemon juice, oregano, pepper, onions and garlic to the spinach. Set the filling aside while you prepare the fillo pastry.

Make a stack of 4 sheets of phyllo pastry, brushing each with melted
butter or margarine. Cut phyllo into 4 equal strips. Work with one strip
at a time, cover the rest with a clean damp cloth.
5. Spoon 2 Tbsp of filling
in the bottom corner and fold in half diagonally, making a triangle.
Keep folding the triangle till you get to the end of the strip. Repeat
until all the filling is used up.
6.. Brush the tops with a little more
butter or margarine, place on a cookie sheet and bake for 10 minutes
at 400° F or until golden brown and crisp.
