Sweet Sesame Seed Vegan Cookies

These light cookies are delicious with a steamy cup of tea. They are wafer-thin and crisp, and have a rich flavor of toasted sesame seeds.
 

Prep time: 20 min
Cook time: 15 min
Total time: 35 min
Yield: 24 cookies

Ingredients:
1 1/2 cups unbleached white flour
1/2 tsp baking powder
1/4 tsp.salt
1 tsp margarine
1/2 cup sesame seeds
1 1/2 cup brown sugar
3/4 cup unsaturated margarine
1 tsp pure vanilla extract
2 Tbs ground flax seed


Directions:
1. Preheat oven to 325 F.

2. Melt the 1 teaspoon margarine in a heavy frying pan over low heat. Add the sesame seed and stir until all are golden brown. Set aside.

3. Cream together the 3/4 cup margarine, brown sugar, and ground flax seed.

4. In a mixing bowl combine the flour, baking powder and salt.

5. Add to the creamed mixture, mix until well blended. Stir in the vanilla and toasted sesame seeds.

6. Drop the cookie dough by spoonfuls onto cookie sheets that have been lightlygreased and floured.

7. Bake for about 15 minutes, or until lightly browned.

8. Wait 10 minutes for them to cool before removing them.
