Vegan Coconut Oat Cookies

These coconut cookies have such a rich, buttery flavor without the butter! They are totally vegan. They are quick to make and even quicker to bake, only 10 minutes. Remove them from the oven when they are still soft to the touch for a soft, chewy delicious cookie.
 

Prep time: 20 min
Cook time: 10 min
Total time: 30 min

Ingredients:
1 cup of vegetable margarine (Earth balance is our favorite)
1 cup of unrefined sugar
1 tsp vanilla
1 tsp baking soda
1/3 cup hot water
1 1/2 cup whole wheat flour
1/2 tsp sea salt
2 cups quick cooking oat flakes
1/2 cup shredded coconut


Directions:
1. Preheat oven to 350 F (180 C).

2. In a large mixing bowl, cream together the margarine, sugar and vanilla until light.

3. Dissolve baking soda in boiling water and add to the batter and mix well.

4. In a separate bowl combine the flour, oats, coconut and salt. Add the dry ingredients to the wet ingredients and mix until well combined.

5. Lightly oil a cookie sheet and place small balls of batter a couple inches appart. Press lightly with a fork into a cookie shape.

6. Bake for 10-12 minutes and remove while still soft to the touch.
