Vegan Peanut Butter Oat Cookies With Chocolate Chips

This vegan peanut butter cookie recipe is an offshoot of the 'Melt In Your Mouth Chocolate Chip Cookie Recipe' that we enjoy so much. These cookies are soft and chewy and rich in flavor with the addition of quick cooking rolled oats. This recipe contains vegan chocolate chips and is a favorite with chocolate peanut butter lovers, but you can omit the chocolate chips if you want a traditional peanut butter cookie.
 

Prep time: 20 min
Cook time: 10 min
Total time: 30 min
Yield: 24 cookies

Ingredients:
3/4 cup of vegetable margarine (Earth balance is our favorite)
1/4 cup peanut buttter
1 cup of brown sugar
1 tsp vanilla
1tsp baking soda
1/3 cup hot water
1 1/2 cup unbleached white flour
1/2 tsp sea salt
1 1/2 cups quick cooking oat flakes
1/2 cup vegan chocolate chips

Directions:
1. Preheat oven to 350 F (180 C).

2. In a large mixing bowl, cream together the margarine, peanut butter, sugar and vanilla until light.

3. Dissolve baking soda in boiling water and add to the batter and mix well.

4. In a separate bowl combine the flour, oats, and salt. Add the dry ingredients to the wet ingredients and mix until well combined.

5. Fold in the chocolate chips. Lightly oil a cookie sheet and place small balls of batter a couple inches appart. Press lightly with a fork into a cookie shape.

6. Bake for 10-12 minutes and remove while still soft to the touch.
