Yam and Raisin Spice Muffins

A wonderful way to add yams to your diet. Yams are high in beta carotene and naturally sweet. These lovely golden orange muffins are perfect for breakfast or a light snack. A healthy vegan spice muffin that will surprise those who try it and discover what the delicious flavor is.
 

Prep time: 20 min
Cook time: 25 min
Total time: 45 min
Yield: 12 large muffins

Ingredients:
1 1/2 cup garnet yam, peeled and roughly chopped
1 cup white unbleached flour
1 cup whole wheat flour
4 tsp baking powder
1/2 tsp cinnamon powder
1/2 tsp ginger powder
1/2 tsp nutmeg
1/2 cup polyunsaturated margarine, softened
3/4 cup unrefined sugar
3/4 cup raisins1/3 cup almond or soy milk
2 Tbs canola or grapeseed oil

Directions:
1. Preheat oven to 350 F (180 C).

2. Steam the yam until tender. Drain and place in a blender or food processor and blend until smooth. Set aside.

3. In a medium mixing bowl combine the flours, baking powder, cinnamon, ginger and nutmeg.

4. In a another mixing bowl combine the blended yam, sugar, milk, oil and margarine. Blend with an electric mixer until creamy.

5. Add the wet ingredients to the dry and mix well by hand or with an electric mixer.

6. Grease muffin tins or line them with muffin cups and spoon in the batter until 3/4 full.

7. Bake for 25 minutes and check them with a toothpick. When the toothpick is clean after inserting they are finished.

8. Let them cool for 10 minutes before gently removing them from the muffin tins.
